1 ½ tsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
½ tsp ground cinnamon
-
½ cup unsalted butter, softened
-
½ cup granulated sugar
-
½ cup light brown sugar, packed
-
1 large egg
-
1 tsp vanilla extract
-
½ cup sour cream
For the Cheesecake Filling:
-
8 oz cream cheese, softened
-
¼ cup granulated sugar
-
1 tsp vanilla extract
-
1 tbsp cornstarch
For the Cinnamon Sugar Coating:
-
¼ cup granulated sugar
-
1 ½ tsp ground cinnamon
Instructions
Step 1: Prepare the Cheesecake Filling
-
In a medium bowl, beat the cream cheese until smooth.
-
Add sugar, vanilla extract, and cornstarch. Beat until fully combined and creamy.
-
Transfer the mixture to a small bowl and refrigerate for 30 minutes to firm up.
Step 2: Make the Dough
-
In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.
-
In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
-
Add the egg and vanilla extract and beat until well combined.
-
Mix in the sour cream until smooth.
-
Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.
-
Cover the dough and refrigerate for 1 hour to make it easier to handle.
Step 3: Preheat the Oven and Prepare Cinnamon Sugar
-
Preheat the oven to 350°F (175°C).
-
In a small bowl, mix together granulated sugar and ground cinnamon for the coating.
Step 4: Assemble the Cookies
-
Using a cookie scoop, scoop out 1 ½ tbsp of dough and flatten it slightly in your hand.
-
Place a teaspoon of the chilled cheesecake filling in the center of the dough.
-
Wrap the dough around the filling and roll it into a smooth ball.
-
Roll each filled dough ball in the cinnamon sugar coating and place it on the prepared baking sheet.
-
Repeat with remaining dough and filling, spacing cookies about 2 inches apart.
Step 5: Bake the Cookies
-
Bake for 12-15 minutes, or until the edges are golden and the tops are set.
-
Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Step 6: Serve and Enjoy
-
Serve warm for a gooey, creamy center or at room temperature for a soft, cakey texture.
-
Dust with extra cinnamon sugar or powdered sugar for added sweetness.
Notes
-
Chill the Filling: Keeping the cheesecake filling cold makes it easier to work with and prevents excessive spreading.
-
Don’t Overbake: The cookies should be slightly soft in the center to maintain the cheesecake texture.
-
Seal the Dough Well: Ensure the dough fully encases the filling to prevent leaks.
-
For Extra Cinnamon Flavor: Add a pinch of cinnamon to the dough for a double cinnamon hit.
