For the Dough:

  • 2 ½ cups all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ½ tsp ground cinnamon

  • ½ cup unsalted butter, softened

  • ½ cup granulated sugar

  • ½ cup light brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup sour cream

For the Cheesecake Filling:

  • 8 oz cream cheese, softened

  • ¼ cup granulated sugar

  • 1 tsp vanilla extract

  • 1 tbsp cornstarch

For the Cinnamon Sugar Coating:

  • ¼ cup granulated sugar

  • 1 ½ tsp ground cinnamon


Instructions

Step 1: Prepare the Cheesecake Filling

  1. In a medium bowl, beat the cream cheese until smooth.

  2. Add sugar, vanilla extract, and cornstarch. Beat until fully combined and creamy.

  3. Transfer the mixture to a small bowl and refrigerate for 30 minutes to firm up.

Step 2: Make the Dough

  1. In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).

  3. Add the egg and vanilla extract and beat until well combined.

  4. Mix in the sour cream until smooth.

  5. Gradually add the dry ingredients to the wet ingredients, mixing just until a soft dough forms.

  6. Cover the dough and refrigerate for 1 hour to make it easier to handle.

Step 3: Preheat the Oven and Prepare Cinnamon Sugar

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, mix together granulated sugar and ground cinnamon for the coating.

Step 4: Assemble the Cookies

  1. Using a cookie scoop, scoop out 1 ½ tbsp of dough and flatten it slightly in your hand.

  2. Place a teaspoon of the chilled cheesecake filling in the center of the dough.

  3. Wrap the dough around the filling and roll it into a smooth ball.

  4. Roll each filled dough ball in the cinnamon sugar coating and place it on the prepared baking sheet.

  5. Repeat with remaining dough and filling, spacing cookies about 2 inches apart.

Step 5: Bake the Cookies

  1. Bake for 12-15 minutes, or until the edges are golden and the tops are set.

  2. Let the cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Step 6: Serve and Enjoy

 

  1. Serve warm for a gooey, creamy center or at room temperature for a soft, cakey texture.

  2. Dust with extra cinnamon sugar or powdered sugar for added sweetness.

  • Chill the Filling: Keeping the cheesecake filling cold makes it easier to work with and prevents excessive spreading.

  • Don’t Overbake: The cookies should be slightly soft in the center to maintain the cheesecake texture.
