- 1 teaspoon cinnamon (optional)
- 2 large eggs
- ½ cup vegetable oil or melted coconut oil
- ½ cup brown sugar
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ cups grated zucchini (about 1 medium zucchini)
- ½ cup semi-sweet chocolate chips, plus extra for topping
Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with non-stick spray or line it with parchment paper.
Step 2: Combine Dry Ingredients
- In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
Step 3: Mix Wet Ingredients
- In a medium bowl, whisk the eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract until well combined.
Step 4: Incorporate Zucchini
- Stir the grated zucchini into the wet ingredients.
Step 5: Combine Wet and Dry
- Gradually add the wet ingredients to the dry ingredients, folding gently until just combined. Avoid overmixing.
- Fold in the chocolate chips.
Step 6: Bake the Bread
- Pour the batter into the prepared loaf pan. Smooth the top with a spatula and sprinkle extra chocolate chips on top if desired.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Step 7: Cool and Serve
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
