  • ½ cup cocoa powder
  • 1 teaspoon baking soda

  • ½ teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 2 large eggs
  • ½ cup vegetable oil or melted coconut oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • ½ cup semi-sweet chocolate chips, plus extra for topping

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with non-stick spray or line it with parchment paper.

Step 2: Combine Dry Ingredients

  1. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.

Step 3: Mix Wet Ingredients

  1. In a medium bowl, whisk the eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract until well combined.

Step 4: Incorporate Zucchini

  1. Stir the grated zucchini into the wet ingredients.

Step 5: Combine Wet and Dry

  1. Gradually add the wet ingredients to the dry ingredients, folding gently until just combined. Avoid overmixing.
  2. Fold in the chocolate chips.

Step 6: Bake the Bread

  1. Pour the batter into the prepared loaf pan. Smooth the top with a spatula and sprinkle extra chocolate chips on top if desired.
  2. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 7: Cool and Serve

  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
