For the Snowballs:

  • 1½ cups creamy peanut butter

  • ½ cup unsalted butter, softened

  • 1 tsp vanilla extract

  • 2 cups powdered sugar

  • 1½ cups crushed graham crackers (or oat flour for gluten-free option)

  • ½ tsp salt

  • 1½ cups semi-sweet chocolate chips (for coating)

  • 1 tbsp coconut oil or vegetable oil (to help chocolate melt smoothly)

  • ½ cup powdered sugar (for rolling)

For the Caramel Drizzle:

  • ¼ cup brown sugar

  • 2 tbsp unsalted butter

  • 1 tbsp milk (or heavy cream for richer drizzle)

  • Pinch of salt

  • ¼ tsp vanilla extract


Instructions

Step 1: Make the Peanut Butter Mixture
In a large bowl, mix the peanut butter and softened butter until smooth and creamy.
Add vanilla extract, salt, and gradually beat in powdered sugar until fully incorporated.
Stir in crushed graham crackers until the mixture forms a soft dough.

Step 2: Shape the Snowballs
Scoop out about 1 tablespoon of dough and roll into a ball.
Place on a baking sheet lined with parchment paper.
Repeat until all the mixture is used—makes about 24 balls.
Chill in the refrigerator for 30–45 minutes to firm up.

Step 3: Coat in Chocolate
In a microwave-safe bowl, melt the chocolate chips with coconut oil in 30-second bursts, stirring in between until smooth.
Dip each chilled ball into the melted chocolate using a fork, then place back onto the lined baking sheet.
Allow excess chocolate to drip off before placing down.
Let set in the fridge for 20 minutes or until firm.

Step 4: Roll in Powdered Sugar
Once the chocolate has set, roll each snowball lightly in powdered sugar for that snowy, festive look.
This step is optional but adds a beautiful finish.

Step 5: Make the Caramel Drizzle
In a small saucepan, combine brown sugar, butter, and milk.
Bring to a gentle simmer over medium heat, stirring constantly for 2–3 minutes until thickened.
Remove from heat and stir in vanilla and a pinch of salt.
Let it cool slightly, then drizzle over the snowballs using a spoon or squeeze bottle.

 

Step 6: Chill & Serve
Refrigerate the snowballs for another 10–15 minutes to allow the caramel drizzle to set.
Serve chilled or at room temperature.
