Instructions

Step 1: Prepare the Brownie Base

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk together melted butter and sugar until smooth.
  3. Add the eggs and vanilla extract, whisking until well combined.
  4. Stir in cocoa powder, flour, salt, and baking powder until the batter is smooth and glossy.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely.

Step 2: Make the Chocolate Mousse

  1. Melt the chocolate chips in a heatproof bowl over a saucepan of simmering water or in the microwave in 20-second increments, stirring until smooth. Let cool slightly.
  2. In a separate bowl, whip 1 cup of heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the melted chocolate in batches, being careful not to deflate the mousse.

Step 3: Assemble the Brownies

  1. Once the brownie base is completely cool, spread the chocolate mousse evenly over the top.
  2. Refrigerate for at least 2 hours, or until the mousse is set.
