Instructions
Step 1: Prepare the Brownie Base
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
- In a mixing bowl, whisk together melted butter and sugar until smooth.
- Add the eggs and vanilla extract, whisking until well combined.
- Stir in cocoa powder, flour, salt, and baking powder until the batter is smooth and glossy.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Let the brownies cool completely.
Step 2: Make the Chocolate Mousse
- Melt the chocolate chips in a heatproof bowl over a saucepan of simmering water or in the microwave in 20-second increments, stirring until smooth. Let cool slightly.
- In a separate bowl, whip 1 cup of heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
- Gently fold the whipped cream into the melted chocolate in batches, being careful not to deflate the mousse.
Step 3: Assemble the Brownies
- Once the brownie base is completely cool, spread the chocolate mousse evenly over the top.
- Refrigerate for at least 2 hours, or until the mousse is set.
