  • 1 cup mixed vegetables: Bell peppers, broccoli, carrots, or snap peas.
  • 2 garlic cloves: Minced for added flavor.
  • 2 tablespoons soy sauce: For seasoning the chicken.
  • 1/4 cup teriyaki sauce: Store-bought or homemade (see note below).
  • 1 tablespoon honey or brown sugar: Optional, for extra sweetness.
  • 1 teaspoon sesame oil: Adds depth to the dish.
  • 1 tablespoon sesame seeds: For garnish.
  • 2 green onions: Chopped, for garnish.

Instructions

Step 1: Cook the Noodles

  1. Bring a pot of salted water to a boil.
  2. Add the noodles and cook according to the package instructions.
  3. Drain and set aside, tossing with a little sesame oil to prevent sticking.

Step 2: Prepare the Chicken

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add the chicken pieces and cook until golden and fully cooked, about 5-7 minutes.
  3. Season with soy sauce and transfer to a plate.

Step 3: Cook the Vegetables

  1. In the same skillet, heat the remaining oil.
  2. Add the garlic and cook until fragrant, about 30 seconds.
  3. Toss in the mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.

Step 4: Combine Everything

  1. Add the cooked chicken and noodles to the skillet with the vegetables.
  2. Pour the teriyaki sauce over the top and add honey or brown sugar if using.
  3. Toss everything together until evenly coated and heated through, about 2 minutes.

Step 5: Garnish and Serve

  1. Sprinkle sesame seeds and green onions on top.

  • Use Fresh Vegetables: For the best flavor and texture, opt for fresh veggies, but frozen ones work in a pinch.
