2 cups cooked shredded chicken (rotisserie or leftover chicken works great)
8 oz cream cheese, softened
½ cup sour cream or Greek yogurt
1 packet (1 oz) taco seasoning
1 cup shredded cheddar cheese (or Mexican blend)
½ cup diced red bell pepper
½ cup chopped green onions

5–6 large flour tortillas (10-inch size, soft taco size)

Instructions
Step 1: Make the Filling
In a large mixing bowl, combine the softened cream cheese and sour cream.
Mix until smooth and creamy.
Stir in the taco seasoning and lime juice until fully blended.
Add in the shredded chicken, cheddar cheese, diced bell pepper, green onions, and cilantro.
Mix well until all ingredients are evenly combined.
Step 2: Assemble the Pinwheels
Lay a flour tortilla flat on a clean surface or cutting board.
Spread a generous layer of the chicken taco filling evenly over the tortilla, leaving about ½ inch of space around the edges.
Roll the tortilla up tightly from one end to the other, like a jelly roll.
Repeat with the remaining tortillas and filling.
Step 3: Chill for Best Results
Wrap each rolled tortilla tightly in plastic wrap.
Refrigerate for at least 1 hour to firm up, which makes slicing easier and helps the flavors meld.
You can also make these the night before and chill overnight.
