Ingredients

For the Meatloaf:

  • Ground Chicken (1 lb) – Lean and full of protein.
  • Breadcrumbs (½ cup) – Helps bind the meatloaf and keep it moist.
  • Milk (¼ cup) – Adds tenderness and moisture.
  • Egg (1 large) – Helps hold everything together.

  • Worcestershire Sauce (1 tbsp) – Brings umami depth.
  • Dijon Mustard (1 tsp) – Adds a slight tang.
  • Salt & Black Pepper (to taste) – Enhances all the flavors.
  • Dried Oregano (½ tsp) – Adds a subtle herbaceous note.
  • Paprika (½ tsp) – A touch of smoky warmth.

For the Glaze:

  • Ketchup (â…“ cup) – Sweet and tangy base.
  • Brown Sugar (1 tbsp) – Adds slight caramelized sweetness.
  • Apple Cider Vinegar (1 tsp) – Balances out the sweetness.
  • Garlic Powder (¼ tsp) – Extra flavor boost.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

Step 2: Prepare the Meatloaf Mixture

In a large bowl, combine ground chicken, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, Dijon mustard, salt, black pepper, oregano, and paprika. Mix until just combined—don’t overmix!

Step 3: Shape the Meatloaf

Shape the mixture into a loaf and place it in the loaf pan or on a lined baking sheet.

Step 4: Make the Glaze

In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and garlic powder.

Step 5: Bake & Glaze

Brush half of the glaze over the meatloaf and bake for 30 minutes. Then, add the remaining glaze and bake for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6: Rest & Serve

Let the meatloaf rest for 5 minutes before slicing. Serve warm with your favorite sides!
