- Chicken Broth (4 cups) – The base of the soup.
- Heavy Cream (1 cup) – Adds richness.

- Celery (2 stalks, diced) – A classic soup veggie.
- Onion (1 small, diced) – Adds depth of flavor.
- Garlic (3 cloves, minced) – Enhances the taste.
- Spinach (2 cups, chopped) – Fresh and nutritious.
- Parmesan Cheese (½ cup, grated) – For a savory touch.
- Butter (2 tbsp) – Adds extra richness.
- Flour (2 tbsp) – Helps thicken the soup.
- Italian Seasoning (1 tsp) – A perfect blend of herbs.
- Salt & Pepper (to taste) – Enhances the flavors.
Instructions
Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery. Sauté for 3–4 minutes until softened. Add minced garlic and cook for another 30 seconds.
Add butter to the pot and let it melt. Stir in the flour and cook for 1 minute, stirring constantly to avoid lumps.
Slowly pour in the chicken broth, stirring as you go. Add the shredded chicken and Italian seasoning. Bring to a simmer.
Add the gnocchi to the pot and cook for 3–5 minutes, or until they float to the surface.
Lower the heat and stir in the heavy cream, spinach, and Parmesan cheese. Let the soup simmer for another 2 minutes, allowing the flavors to blend. Season with salt and pepper to taste.
Ladle the soup into bowls and garnish with extra Parmesan or fresh herbs if desired. Serve warm with crusty bread or a side salad.
