Ingredients

  • Olive Oil (2 tbsp) – For sautéing.
  • Chicken Breast (1 lb, cooked & shredded) – Lean protein for heartiness.
  • Gnocchi (1 lb, store-bought or homemade) – Soft, pillowy potato dumplings.
  • Chicken Broth (4 cups) – The base of the soup.
  • Heavy Cream (1 cup) – Adds richness.
  • Carrot (1 large, diced) – Sweetness and texture.
  • Celery (2 stalks, diced) – A classic soup veggie.
  • Onion (1 small, diced) – Adds depth of flavor.
  • Garlic (3 cloves, minced) – Enhances the taste.
  • Spinach (2 cups, chopped) – Fresh and nutritious.
  • Parmesan Cheese (½ cup, grated) – For a savory touch.
  • Butter (2 tbsp) – Adds extra richness.
  • Flour (2 tbsp) – Helps thicken the soup.
  • Italian Seasoning (1 tsp) – A perfect blend of herbs.

 

  • Salt & Pepper (to taste) – Enhances the flavors.

Instructions

Step 1: Sauté the Vegetables

Heat olive oil in a large pot over medium heat. Add diced onion, carrot, and celery. Sauté for 3–4 minutes until softened. Add minced garlic and cook for another 30 seconds.

Step 2: Make the Roux

Add butter to the pot and let it melt. Stir in the flour and cook for 1 minute, stirring constantly to avoid lumps.

Step 3: Add Broth and Chicken

Slowly pour in the chicken broth, stirring as you go. Add the shredded chicken and Italian seasoning. Bring to a simmer.

Step 4: Cook the Gnocchi

Add the gnocchi to the pot and cook for 3–5 minutes, or until they float to the surface.

Step 5: Add Cream & Spinach

Lower the heat and stir in the heavy cream, spinach, and Parmesan cheese. Let the soup simmer for another 2 minutes, allowing the flavors to blend. Season with salt and pepper to taste.

Step 6: Serve & Enjoy!

Ladle the soup into bowls and garnish with extra Parmesan or fresh herbs if desired. Serve warm with crusty bread or a side salad.

Notes

  • Use Rotisserie Chicken – A time-saving shortcut for quick prep.
  • Don’t Overcook the Gnocchi – Once they float, they’re done! Overcooking makes them mushy.
  • Adjust Thickness – If the soup is too thick, add more broth. If too thin, let it simmer a little longer.
