Description

This Cherry Almond Bread is a sweet, moist, and flavorful loaf that’s perfect for breakfast, a midday snack, or even dessert. Packed with juicy cherries and the warm, nutty flavor of almonds, it’s a simple yet elegant treat that will delight your taste buds.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup plain yogurt (or sour cream)
  • 1 teaspoon almond extract
  • 1 cup fresh or frozen cherries, pitted and halved
  • 1/2 cup sliced almonds
  • Optional: Powdered sugar for dusting

Instructions

Step 1: Preheat and Prep

  1. Preheat your oven to 350°F (175°C).
  2. Grease and lightly flour a loaf pan or line it with parchment paper.

Step 2: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Step 3: Cream the Butter and Sugar

  1. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the almond extract.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the butter mixture, alternating with the yogurt. Begin and end with the dry ingredients. Mix until just combined.

Step 5: Fold in Cherries and Almonds

  1. Gently fold in the cherries and sliced almonds with a spatula, being careful not to overmix.

Step 6: Bake

  1. Pour the batter into the prepared loaf pan and spread it evenly.
  2. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. If the top browns too quickly, cover it loosely with foil during the last 10-15 minutes of baking.

Step 7: Cool and Serve

  1. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  2. Dust with powdered sugar before slicing, if desired.

Notes

  • Use Fresh Cherries: If using frozen cherries, thaw and pat them dry to avoid excess moisture.
  • Don’t Overmix: Overmixing can result in a dense loaf. Stir until just combined.
  • Try Toasting: Toast slices for an even richer flavor.
