Ingredients

For the Cheesesteak Mixture:

  • Beef (1 lb, thinly sliced or ground): Ribeye, sirloin, or ground beef.

  • Bell Peppers (1, sliced): Green, red, or yellow for a pop of color.

  • Onion (1, sliced): Sweet or yellow onion works best.

  • Garlic (2 cloves, minced): Adds extra flavor.

  • Salt & Pepper: To taste.

  • Olive Oil (1 tbsp): For sautéing.

For the Provolone Sauce:

  • Butter (2 tbsp): Creates a rich base for the sauce.

  • Flour (2 tbsp): Helps thicken the sauce.

  • Milk (1 ½ cups): Whole milk or half-and-half for creaminess.

  • Provolone Cheese (1 ½ cups, shredded): The star of the sauce.

  • Parmesan Cheese (¼ cup, grated): Adds extra depth.

  • Salt & Black Pepper: To taste.

For the Pasta:

  • Cheese Tortellini (1 lb): Fresh or frozen.

  • Fresh Parsley (for garnish): Adds color and freshness.


Instructions

1. Cook the Beef & Veggies

  • Heat olive oil in a large skillet over medium-high heat.

  • Add the sliced beef and cook until browned. Remove and set aside.

  • In the same skillet, sauté onions, peppers, and garlic until soft. Return the beef to the skillet and stir to combine.

2. Cook the Tortellini

  • While the beef cooks, boil the tortellini according to package instructions. Drain and set aside.

3. Make the Provolone Sauce

  • In a medium saucepan, melt butter over medium heat.

  • Whisk in the flour and cook for 1 minute.

  • Gradually add milk, whisking constantly until smooth.

  • Stir in shredded provolone and Parmesan cheese until melted and creamy.

  • Season with salt and black pepper to taste.

4. Combine Everything

  • Add the cooked tortellini to the skillet with the beef and veggies.

  • Pour the provolone sauce over everything and stir to coat.

5. Serve & Enjoy
