Ingredients
For the Cheesecake Filling:

4 oz cream cheese (softened)

2 tbsp powdered sugar

½ tsp vanilla extract
For the Chocolate Chip Cookie Dough:

½ cup butter (softened)
-
½ cup brown sugar (packed)

¼ cup granulated sugar

1 egg
-
1 tsp vanilla extract
-
1 ½ cups all-purpose flour
-
½ tsp baking soda
-
¼ tsp salt

¾ cup chocolate chips
Instructions
Step 1: Make the Cheesecake Filling

In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.

Scoop teaspoon-sized portions onto a parchment-lined plate.

Freeze for 30 minutes while you prepare the cookie dough.
Step 2: Prepare the Cookie Dough

In a mixing bowl, beat butter, brown sugar, and granulated sugar until fluffy.

Add the egg and vanilla extract; mix until combined.

In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until a dough forms.

Fold in chocolate chips.
Step 3: Assemble the Cookies

Scoop 2 tablespoons of cookie dough and flatten it slightly in your palm.

Place a frozen cheesecake filling in the center.

Cover with another 1 tablespoon of cookie dough, sealing the edges around the cheesecake.

Roll into a ball and place on a lined baking sheet. Repeat with remaining dough.
Step 4: Bake & Cool

Preheat oven to 350°F (175°C).

Bake for 12–14 minutes, or until the edges are golden brown.

Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
