  • 12 oz pasta: Linguine, spaghetti, or fettuccine works best.
  • 2 lobster tails (about 68 oz each): Fresh or frozen (thawed).
  • 3 tablespoons unsalted butter: For the sauce.
  • 2 tablespoons olive oil: Helps sear the lobster.
  • 4 garlic cloves, minced: Adds a fragrant, savory base.
  • 1/2 teaspoon red pepper flakes: Optional, for a hint of heat.
  • 1/4 cup heavy cream: For extra richness in the sauce.
  • 1/4 cup grated Parmesan cheese: To enhance the creamy texture.
  • 1 tablespoon lemon juice: Brightens up the dish.
  • 1/4 cup chopped fresh parsley: For garnish and a fresh finish.
  • Salt and pepper, to taste: Enhances the flavors.

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2: Prepare the Lobster

  1. While the pasta cooks, use kitchen shears to cut the lobster tails down the back to expose the meat. Carefully remove the meat and cut it into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Add the lobster pieces and season with salt and pepper. Sear for 2-3 minutes per side until opaque and cooked through. Remove from the skillet and set aside.

Step 3: Make the Butter Sauce

  1. In the same skillet, melt the butter over medium heat. Add the garlic and red pepper flakes, cooking for about 1 minute until fragrant.
  2. Stir in the heavy cream and Parmesan cheese, whisking until smooth. Simmer for 2-3 minutes to thicken slightly.
  3. Add the lemon juice and season with salt and pepper to taste.

Step 4: Combine the Pasta and Sauce

  1. Add the cooked pasta to the skillet, tossing to coat it in the sauce. If needed, add a splash of the reserved pasta water to loosen the sauce.
  2. Gently fold in the cooked lobster pieces and cook for 1-2 minutes until warmed through.

Step 5: Serve and Garnish

  1. Plate the pasta and lobster, then sprinkle with fresh parsley. Serve immediately with extra Parmesan cheese if desired.

  • Use Fresh Lobster: Fresh lobster tail elevates the dish, but frozen works well if thawed properly.
