Ingredients
Scale
To make this rich and flavorful pasta dish, you’ll need:
- 12 oz pasta: Linguine, spaghetti, or fettuccine works best.
- 2 lobster tails (about 6–8 oz each): Fresh or frozen (thawed).
- 3 tablespoons unsalted butter: For the sauce.
- 2 tablespoons olive oil: Helps sear the lobster.
- 4 garlic cloves, minced: Adds a fragrant, savory base.
- 1/2 teaspoon red pepper flakes: Optional, for a hint of heat.
- 1/4 cup heavy cream: For extra richness in the sauce.
- 1/4 cup grated Parmesan cheese: To enhance the creamy texture.
- 1 tablespoon lemon juice: Brightens up the dish.
- 1/4 cup chopped fresh parsley: For garnish and a fresh finish.
- Salt and pepper, to taste: Enhances the flavors.
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
Step 2: Prepare the Lobster
- While the pasta cooks, use kitchen shears to cut the lobster tails down the back to expose the meat. Carefully remove the meat and cut it into bite-sized pieces.
- Heat olive oil in a large skillet over medium heat. Add the lobster pieces and season with salt and pepper. Sear for 2-3 minutes per side until opaque and cooked through. Remove from the skillet and set aside.
Step 3: Make the Butter Sauce
- In the same skillet, melt the butter over medium heat. Add the garlic and red pepper flakes, cooking for about 1 minute until fragrant.
- Stir in the heavy cream and Parmesan cheese, whisking until smooth. Simmer for 2-3 minutes to thicken slightly.
- Add the lemon juice and season with salt and pepper to taste.
Step 4: Combine the Pasta and Sauce
- Add the cooked pasta to the skillet, tossing to coat it in the sauce. If needed, add a splash of the reserved pasta water to loosen the sauce.
- Gently fold in the cooked lobster pieces and cook for 1-2 minutes until warmed through.
Step 5: Serve and Garnish
- Plate the pasta and lobster, then sprinkle with fresh parsley. Serve immediately with extra Parmesan cheese if desired.
Notes
- Use Fresh Lobster: Fresh lobster tail elevates the dish, but frozen works well if thawed properly.
- Don’t Overcook Lobster: Lobster meat becomes tough when overcooked, so keep a close eye on it.
- Adjust Sauce Consistency: Use pasta water to make the sauce lighter or creamier, depending on your preference.
