- 8 oz (225g) linguine or spaghetti
- 2 lobster tails, cooked and meat chopped into bite-sized pieces
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup chicken or vegetable stock
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped
- Juice of 1/2 lemon
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil and cook the linguine or spaghetti according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
Step 2: Prepare the Lobster and Sauce
- Heat olive oil in a large skillet over medium heat.
- Add the butter and let it melt, then sauté the garlic until fragrant (about 1 minute).
- Toss in the cherry tomatoes and cook for 3-5 minutes until they soften and release their juices.
- Add the red pepper flakes (if using) and the stock. Simmer for 2 minutes.
Step 3: Add the Lobster
- Stir in the chopped lobster meat and cook for 2-3 minutes until warmed through. Season with salt, pepper, and a squeeze of lemon juice.
Step 4: Toss the Pasta
- Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss everything together until well coated in the buttery sauce.
- Sprinkle in the Parmesan cheese and parsley. Toss again to combine.
Step 5: Serve
- Divide the pasta among plates and garnish with extra parsley and Parmesan, if desired. Serve immediately while warm.
