Ingredients
Scale
Here’s what you’ll need to make these delightful cookies:
- 1 cup unsalted butter: Softened for easy creaming.
- 1 cup brown sugar: Adds sweetness and a caramel-like depth.
- 1/2 cup granulated sugar: For a touch of crispness.
- 2 large eggs: At room temperature for better mixing.
- 2 teaspoons vanilla extract: Enhances the flavor.
- 2 1/4 cups all-purpose flour: The base of the cookie dough.
- 1 teaspoon baking soda: Helps the cookies rise slightly.
- 1/2 teaspoon salt: Balances the sweetness.
- 1 1/2 cups chopped pecans: Toasted for maximum flavor.
Instructions
Step 1: Toast the Pecans
- Preheat your oven to 350°F (175°C).
- Spread the chopped pecans on a baking sheet and toast them for 5-7 minutes until fragrant. Let them cool while you prepare the dough.
Step 2: Make the Cookie Dough
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the toasted pecans gently.
Step 3: Scoop and Bake
- Use a cookie scoop or tablespoon to drop dough onto lined baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers look set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Don’t Skip Toasting the Pecans: It enhances their flavor and adds a satisfying crunch.
- Chill the Dough: For thicker cookies, refrigerate the dough for 30 minutes before baking.
- Measure Flour Correctly: Spoon and level the flour to avoid dense cookies.
