Ingredients
Scale
- 2 large eggs
- 2 turkey sausages
- 1 cup baked beans (canned or homemade)
- 1 cup button mushrooms, sliced
- 2 slices of bread (white or whole-grain)
- 2 tablespoons olive oil or butter
- Salt and pepper, to taste
- 1 teaspoon smoked paprika (optional): For seasoning the mushrooms.
- Fresh parsley (optional): For garnish.
Instructions
Step 1: Prepare the Turkey Sausages
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the turkey sausages and cook for 8-10 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and keep warm.
Step 2: Cook the Mushrooms
- In the same skillet, add the sliced mushrooms.
- Season with salt, pepper, and smoked paprika (if using). Sauté for 4-5 minutes until golden and tender. Remove and set aside.
Step 3: Warm the Beans
- In a small saucepan, warm the baked beans over low heat, stirring occasionally.
Step 4: Fry the Bread
- Add another tablespoon of oil or butter to the skillet.
- Place the slices of bread in the pan and fry until golden and crispy on both sides, about 1-2 minutes per side. Remove and set aside.
Step 5: Cook the Eggs
- Reduce the heat to medium-low. Crack the eggs into the skillet and cook sunny-side up, or to your preferred doneness. Season with a pinch of salt and pepper.
Step 6: Assemble the Breakfast Plate
- Arrange the turkey sausages, mushrooms, beans, fried bread, and eggs on a plate. Garnish with fresh parsley if desired, and serve warm.
Notes
- Crispy Fried Bread: Use slightly stale bread for the best texture.
- Flavor Boost: Add garlic or herbs while frying the mushrooms for extra flavor.
- Eggs Your Way: Poached or scrambled eggs also work beautifully with this meal.
