Ingredients
- 1 cup fresh blueberries (or frozen, thawed)
- 4 oz cream cheese, softened
- 3 tbsp sugar
- 1 tsp vanilla extract
- 1 tbsp lemon zest (optional, for a hint of citrus)
- 8–10 egg roll wrappers
- Water (for sealing wrappers)
- Oil, for frying
- Powdered sugar, for dusting
Instructions
Step 1: Prepare the Filling
- In a small bowl, combine cream cheese, sugar, and vanilla extract. Mix until smooth and creamy.
- Gently fold in the blueberries and lemon zest, if using. Be careful not to mash the blueberries too much.
Step 2: Assemble the Egg Rolls 3. Place an egg roll wrapper on a clean surface with one corner pointing towards you (like a diamond shape). 4. Spoon about 1-2 tablespoons of the blueberry cream cheese mixture onto the center of the wrapper. 5. Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper up tightly to enclose the filling, using a bit of water to seal the top corner. 6. Repeat with the remaining wrappers and filling.
Step 3: Fry the Egg Rolls 7. In a small saucepan, heat about 1 inch of oil over medium heat until it reaches 350°F (175°C). 8. Carefully place 2-3 egg rolls in the hot oil, being careful not to overcrowd the pan. Fry for 2-3 minutes, turning occasionally, until golden brown. 9. Use tongs or a slotted spoon to remove the egg rolls from the oil, and place them on paper towels to drain.
Step 4: Serve and Enjoy 10. Dust the egg rolls with powdered sugar and serve warm. Enjoy with a scoop of vanilla ice cream or a drizzle of honey for an extra treat!
