  • ½ cup plain Greek yogurt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey or maple syrup
  • ½ cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries
  • Pinch of salt
  • Optional toppings: sliced almonds, powdered sugar, or additional fresh blueberries

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with a light coat of cooking spray or a small amount of butter.

Step 2: Mix the Wet Ingredients

  1. In a large mixing bowl, whisk together cottage cheese, Greek yogurt, eggs, vanilla extract, and honey until smooth and well combined.

Step 3: Add the Dry Ingredients

  1. Stir in the rolled oats, baking powder, ground cinnamon, and a pinch of salt until fully incorporated.

Step 4: Fold in the Blueberries

  1. Gently fold in the blueberries, reserving a few for topping if desired.

Step 5: Bake

  1. Pour the mixture into the prepared baking dish, spreading it out evenly. Sprinkle any reserved blueberries on top.
  2. Bake for 30-35 minutes, or until the top is golden and the center is set. A toothpick inserted in the center should come out clean.

Step 6: Cool and Serve

  1. Allow the bake to cool for 5-10 minutes before slicing. Serve warm or at room temperature with your favorite toppings.

Notes

  • Use Fresh or Frozen Blueberries: Both work well, but if using frozen, do not thaw them to prevent excess moisture.
