Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 2 cups fresh or frozen blueberries (do not thaw if frozen)
  • 1 tablespoon flour (for coating blueberries)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour your mini loaf pans or line them with parchment paper.

Step 2: Prepare the Dry Ingredients

  1. In a bowl, whisk together the flour, baking powder, baking soda, and salt.

Step 3: Cream the Butter and Sugar

  1. In a separate large bowl, use a mixer to cream the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs, one at a time, followed by the vanilla extract.

Step 4: Combine Wet and Dry Ingredients

  1. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined—do not overmix.

Step 5: Fold in the Blueberries

  1. Toss the blueberries with 1 tablespoon of flour to prevent them from sinking.
  2. Gently fold the blueberries into the batter using a spatula.

Step 6: Fill the Pans and Bake

  1. Divide the batter evenly among the prepared mini loaf pans, filling each about 3/4 full.
  2. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Step 7: Cool and Serve

  1. Allow the loaves to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  2. Serve warm or at room temperature.

Notes

  • Room Temperature Ingredients: Ensure the butter, eggs, and buttermilk are at room temperature for a smoother batter.
  • Don’t Overmix: Mix the batter just until combined to keep the loaves tender.
  • Fresh vs. Frozen Blueberries: Both work well, but frozen blueberries may tint the batter slightly purple.
