Ingredients
Scale
For the Salmon:
- 4 salmon fillets (5–6 oz each)
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Linguine:
- 12 oz linguine
- 2 tablespoons butter
- 3 garlic cloves, minced
- 1/2 cup heavy cream
- 1/2 cup chicken broth (or vegetable broth)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- Salt and pepper to taste
Optional Garnishes:
- Fresh parsley, chopped
- Lemon wedges
- Extra Parmesan cheese
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain, reserving 1/2 cup of the pasta water, and set aside.
Step 2: Season the Salmon
- In a small bowl, mix the paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper.
- Pat the salmon fillets dry and rub the seasoning mixture evenly over both sides.
Step 3: Sear the Salmon
- Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets skin-side down (if skin-on) and cook for 3-4 minutes per side until blackened and cooked through. Remove from the skillet and set aside.
Step 4: Make the Creamy Sauce
- Reduce the heat to medium and add butter to the skillet. Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese, lemon zest, and lemon juice. Season with salt and pepper to taste.
Step 5: Combine Pasta and Sauce
- Add the cooked linguine to the skillet with the sauce, tossing to coat evenly. If the sauce is too thick, add a splash of the reserved pasta water to loosen it.
Step 6: Serve
- Divide the creamy linguine among plates and top each with a blackened salmon fillet. Garnish with fresh parsley, extra Parmesan, and a lemon wedge if desired.
Notes
- Don’t Overcook the Salmon: Cook just until the salmon flakes easily with a fork to keep it moist and tender.
- Adjust the Heat: Add more or less cayenne pepper depending on your spice preference.
- Use Fresh Ingredients: Freshly grated Parmesan and lemon juice elevate the dish’s flavor.
- Make it Lighter: Swap heavy cream for half-and-half or a plant-based alternative if desired.
