Ingredients
Scale
- 1 cup fresh blackberries (mashed)
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar (for added depth of flavor)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Optional add-ins: 1/2 cup white chocolate chips or chopped nuts
Instructions
Step 1: Prepare the Blackberries
- Wash and mash the blackberries in a bowl using a fork or potato masher. Set aside.
Step 2: Cream Butter and Sugars
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2 minutes).
Step 3: Add Wet Ingredients
- Beat in the egg, vanilla extract, and mashed blackberries until combined. The mixture may look slightly curdled—don’t worry, that’s normal!
Step 4: Combine Dry Ingredients
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.
- Fold in any optional add-ins like white chocolate chips or nuts.
Step 5: Chill the Dough
- Cover the dough and refrigerate for at least 30 minutes. This helps prevent the cookies from spreading too much during baking.
Step 6: Bake the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
- Scoop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
- Bake for 12–15 minutes, or until the edges are lightly golden. The centers will remain slightly soft.
Step 7: Cool and Serve
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Use Fresh Blackberries: Fresh blackberries provide the best flavor and color, but you can use frozen ones if needed—just thaw and drain them first.
- Chill the Dough: This step is crucial for thick, chewy cookies.
- Customize the Flavor: Add a teaspoon of lemon zest to brighten the flavor even more.
