  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce

For the Sauce:

  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce (optional, for color)
  • 1 teaspoon sugar
  • 1/3 cup chicken broth or water
  • 1 teaspoon freshly cracked black pepper (adjust to taste)
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 1 small onion, sliced
  • 1 bell pepper, cut into strips (red, green, or yellow)
  • 2 garlic cloves, minced
  • 1/2 teaspoon ginger, minced
  • Optional garnish: Sliced green onions or sesame seeds

Instructions

Step 1: Marinate the Chicken

  1. In a mixing bowl, toss the chicken pieces with cornstarch and soy sauce until evenly coated. Let it marinate for 10 minutes while you prepare the other ingredients.

Step 2: Prepare the Sauce

  1. In a small bowl, whisk together the soy sauce, oyster sauce, dark soy sauce (if using), sugar, chicken broth, and cracked black pepper. Set aside.

Step 3: Stir-Fry the Chicken

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add the marinated chicken and cook for 4-5 minutes, stirring occasionally, until lightly browned and cooked through. Remove the chicken from the pan and set aside.

Step 4: Cook the Vegetables

  1. In the same pan, add the remaining tablespoon of oil. Sauté the onion, bell pepper, garlic, and ginger for 2-3 minutes, or until the vegetables are slightly tender but still crisp.
