Instructions
Step 1: Make the Crust
- Preheat your oven to 325°F (160°C) and line a 9×9-inch pan with parchment paper, leaving an overhang for easy removal.
- In a bowl, mix the crushed chocolate cookies with melted butter until the mixture resembles wet sand.
- Press the crust mixture firmly into the bottom of the prepared pan.
- Bake for 8-10 minutes, then let cool while you prepare the cheesecake layer.
Step 2: Prepare the Cheesecake Layer
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
- Add the sugar and mix until combined.
- Beat in the eggs, one at a time, then add the vanilla extract and flour. Mix until the batter is smooth and creamy.
- Pour the cheesecake batter over the cooled crust, spreading it evenly.
Step 3: Bake the Cheesecake
