Instructions

Step 1: Make the Crust

  1. Preheat your oven to 325°F (160°C) and line a 9×9-inch pan with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, mix the crushed chocolate cookies with melted butter until the mixture resembles wet sand.
  3. Press the crust mixture firmly into the bottom of the prepared pan.
  4. Bake for 8-10 minutes, then let cool while you prepare the cheesecake layer.

Step 2: Prepare the Cheesecake Layer

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add the sugar and mix until combined.
  3. Beat in the eggs, one at a time, then add the vanilla extract and flour. Mix until the batter is smooth and creamy.
  4. Pour the cheesecake batter over the cooled crust, spreading it evenly.

Step 3: Bake the Cheesecake

  1. Bake the cheesecake layer in the preheated oven for 30-35 minutes, or until the center is set and no longer jiggles.
  2. Let the cheesecake cool to room temperature, then refrigerate for at least 3 hours or overnight for best results.

Step 4: Add the Topping

  1. Spread the cherry pie filling evenly over the chilled cheesecake layer.
  2. Sprinkle the top with shaved chocolate for a beautiful finish.

Step 5: Slice and Serve

  1. Use the parchment paper overhang to lift the bars from the pan.
  2. Slice into squares or rectangles, and garnish with whipped cream, if desired.
