Ingredients
Scale
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 medium sweet potatoes, peeled and diced
- 1 cup bell peppers, sliced (red, yellow, or green)
- ½ red onion, sliced
- 1 zucchini, sliced
- ½ cup BBQ sauce (your favorite brand)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and pepper, to taste
- Fresh parsley or cilantro, for garnish (optional)
- 1 cup shredded cheese (cheddar or mozzarella, optional)
Instructions
Step 1: Prep the Ingredients
- Preheat your grill to medium-high heat (or oven to 400°F / 200°C).
- Cut the chicken into bite-sized cubes and slice all vegetables.
- In a large bowl, toss the sweet potatoes, bell peppers, onion, and zucchini with olive oil, garlic powder, smoked paprika, salt, and pepper.
Step 2: Assemble the Foil Packets
- Lay out four large pieces of aluminum foil (about 12 inches each).
- Divide the sweet potato and veggie mixture evenly onto each piece of foil.
- Add the cubed chicken on top of the veggies.
- Drizzle each packet with BBQ sauce and, if using, sprinkle shredded cheese on top.
Step 3: Seal the Packets
- Fold the sides of the foil up and over the food, then seal tightly to create a packet. Ensure there are no openings so the steam stays inside while cooking.
Step 4: Cook the Foil Packets
- Grill Method: Place the packets directly on the grill and cook for 20-25 minutes, flipping halfway through.
- Oven Method: Place the packets on a baking sheet and bake for 25-30 minutes, until the sweet potatoes are tender and the chicken is fully cooked.
Step 5: Serve and Enjoy
- Carefully open the foil packets (watch out for steam!).
- Garnish with fresh parsley or cilantro and serve hot.
Notes
- Cut everything evenly: This ensures all ingredients cook at the same time.
- Use heavy-duty foil: Prevents tearing and helps retain heat.
- Marinate the chicken: For extra flavor, marinate the chicken in BBQ sauce for 30 minutes to 1 hour before cooking.
- Make it spicy: Add a pinch of cayenne pepper or a few slices of jalapeño for heat.
