Ingredients
- Ripe Bananas (3 large, mashed): The riper, the better for maximum sweetness.
- Vanilla Instant Pudding Mix (3.4 oz packet): Adds a rich and creamy texture.
- All-Purpose Flour (2 cups): The base for a perfectly structured loaf.
- Granulated Sugar (¾ cup): For just the right amount of sweetness.
- Brown Sugar (¼ cup, packed): Adds depth of flavor and extra moisture.
- Eggs (2 large): Helps bind everything together.
- Unsalted Butter (½ cup, melted): Keeps the bread soft and buttery.
- Milk (¼ cup): Enhances moisture and richness.
- Baking Powder (1 tsp): Helps the bread rise.
- Baking Soda (½ tsp): Ensures a light, fluffy texture.
- Salt (½ tsp): Balances the sweetness.
- Vanilla Extract (1 tsp): Enhances the pudding flavor.
- Nilla Wafers (½ cup, crushed, plus extra for topping): For a nostalgic banana pudding crunch.
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray.
In a large bowl, whisk together the mashed bananas, melted butter, granulated sugar, brown sugar, eggs, milk, and vanilla extract until smooth.
Stir in the vanilla instant pudding mix and mix well until fully incorporated.
In the same bowl, add flour, baking powder, baking soda, and salt. Gently fold everything together until just combined—don’t overmix!
Fold in the crushed Nilla Wafers, leaving a few extra for topping.
Pour the batter into the prepared loaf pan and sprinkle additional crushed Nilla Wafers on top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice, serve, and enjoy!
Notes
- Use Overripe Bananas: The more spots, the sweeter and better the flavor.
- Don’t Overmix: Stir until just combined for the softest bread.
- Cover Loaf if Needed: If the top browns too quickly, tent with foil.
- Storage: Wrap leftovers in plastic wrap or store in an airtight container for up to 3 days.
