Ingredients
For the Salmon & Asparagus:
- Salmon Fillets (4, about 6 oz each) – Fresh or frozen (thawed) works well.
- Asparagus (1 bunch, trimmed) – Crisp and vibrant.
- Olive Oil (1 tbsp) – Helps the asparagus roast beautifully.
- Salt & Pepper (to taste) – Enhances the flavors.
For the Lemon Garlic Butter Sauce:
- Unsalted Butter (4 tbsp, melted) – Rich and silky.
- Garlic (4 cloves, minced) – Adds depth of flavor.
- Lemon Juice (2 tbsp, freshly squeezed) – Bright and zesty.
- Lemon Zest (1 tsp) – Extra citrus punch.
- Honey (1 tbsp, optional) – Balances the acidity.
- Paprika (½ tsp, optional) – Adds a hint of smokiness.
- Fresh Parsley (2 tbsp, chopped) – For garnish.
- Lemon Slices (for topping) – Adds freshness.
Instructions
Step 1: Prepare the Foil Packets
- Preheat your oven to 400°F (200°C).
- Cut four large sheets of aluminum foil (enough to wrap each salmon fillet completely).
- Place a handful of asparagus in the center of each foil sheet, drizzle with olive oil, and season with salt and pepper.
Step 2: Season the Salmon
- Place a salmon fillet on top of the asparagus in each foil packet.
- Season the salmon with salt, pepper, and paprika (if using).
Step 3: Make the Lemon Garlic Butter Sauce
- In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, and honey.
- Spoon or brush the sauce evenly over each salmon fillet.
- Place lemon slices on top of each fillet for extra freshness.
Step 4: Wrap & Bake
- Fold the foil over the salmon and crimp the edges to seal tightly, creating a packet.
- Place the foil packets on a baking sheet and bake for 15–18 minutes, or until the salmon is cooked through and flakes easily with a fork.
Step 5: Serve & Enjoy!
- Carefully open the foil packets (watch out for steam).
- Garnish with fresh parsley and serve warm with extra lemon wedges.
Notes
- Use Fresh Salmon – It yields the best flavor and texture.
- Don’t Overbake – Salmon is done when it reaches 145°F (63°C) or flakes easily.
- Customize the Veggies – Swap asparagus for zucchini, bell peppers, or green beans.
- Broil for a Crispy Finish – Unwrap the foil in the last 2 minutes and broil for a slightly crispier top.
