Instructions

Step 1: Prepare the Ricotta Filling

  1. In a mixing bowl, combine the ricotta cheese, lemon zest, chopped basil, minced garlic, salt, and pepper. Mix until smooth and creamy.

Step 2: Pre-Cook the Asparagus
2. Blanch the asparagus by boiling them in salted water for 2 minutes, then immediately transfer to an ice bath to preserve their vibrant green color. Pat dry and set aside.

Step 3: Assemble the Salmon Rolls
3. Lay out each salmon fillet and spread a thin layer of the ricotta mixture over the surface.
4. Place 1-2 asparagus spears on one end of each fillet, then roll up tightly, starting from the asparagus side. Secure each roll with kitchen twine or a toothpick.

Step 4: Season and Bake
5. Preheat your oven to 375°F (190°C). Place the salmon rolls in a lightly greased baking dish.
6. Brush each roll with olive oil and sprinkle with paprika, salt, and pepper.
7. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
