Step 1: Prepare the Dough

- Mix in the egg yolk and almond extract until well combined.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
Step 2: Shape the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll the chilled dough into a rectangle about 1/4-inch thick. Cut the dough into small triangles or crescent shapes to mimic the look of croissants.
